New Bread Class in November
with Jolynn Deloach

Bread:  The No-Knead Method -  Wednesday November 2, 6 pm $40 REGISTER

Have you heard of No-Knead Bread Dough (made famous by this NY Times article of 2011) and wondered  what all the excitement is about? More than just a recipe, this dough method is a lesson in making and working with high hydration doughs that result in lighter open-crumb loaves, and tender flat breads. This class will focus on flatbreads -- Jolynn will demonstrate the simple technique of mixing the dough, and have pre-made dough in different stages to show recipes and ideas for flat breads -- including pizza and focaccia.

A Different Approach to Pie

Savory Hand Pies and Hot Water Crust Dough -  Monday November 14, 6 pm $45 REGISTER

This class explores pie making from a different vantage. With recipes inspired by The Great British Baking Show, we'll turn standard pastry making technique "on its ear." A menu of savory meat and vegetable pies starts with hot water crust dough -- a sturdy pastry that requires boiling water, melted fat, and vigorous kneading -- that contains juicy meat and vegetable fillings, and stands on its own without a mold. The menu will put an American home-style spin on a British tradition.
