For The Love of Chicken
 with chef Junnie Lai featuring Griggstown Farm Poultry

Simple, classic, homey . . . great cooking starts with the best farm products and a few basic culinary skills. In this class Chef Junnie Lai will share a menu of Chicken Dinner recipes showcasing the poultry of Griggstown Farm (undeniably, the tastiest poultry birds in New Jersey*). Each recipe calls on a specific technique that enhances the flavors and presentation of the dish.

The Menu:
  • Upright Honey Roasted Chicken
    (How to get a crispy skin every time, and how to carve a roasted chicken)
  • Lemon Jalapeno Poussin
    (Learn what the pros call "fabrication," a.k.a., cutting up a whole bird)
  • Chicken and Dumplings ("white" chicken broth)
  • Cream of Vegetable soup (w brown chicken stock)
    (Details on the art of making good stocks and broth -- for sauces and soups)


Junnie Lai is a chef who uses her talents and creativity to make beautiful, delicious and health-conscious food -- and her recent classes on Thai Cuisine and Vegetarian Cooking are testament to her terrific culinary skills. Born and raised in Malaysia, Junnie grew up in her family's baking business, and has extensive experience in baking and pastry. She continued her education and training in the United States, and has worked in the US as a research chef in food product development.

*Located in Princeton, NJ, Griggstown Farm is a 65 acre sustainable farm, community kitchen and market that raises, grows and produces all natural poultry and minimally processed food products on-site. (Their products are available every Saturday at The Burlington County Farmers Market.)

Hands-on Fresh Tomato Canning Class  

We're having a great Jersey Tomato season -- let's preserve some of it . . . Learn a simple, efficient canning method, and gain the skill and confidence to go home and "put up" a few cases of the season's most delicious bounty. For this class -- all ingredients and equipment (including jars) are provided. $30; Students take home two pint jars of tomatoes

This class is taught by Danielle Brenner of The Jersey Farmhouse, specializing in preserving New Jersey's freshest produce. (You know Danielle, she and her luscious preserves are at our weekly Farmers Market.) She hopes that her classes empower people to preserve the local bounty, and heighten our appreciation for what goes into the food we eat.
